This week's ingredient is Pecan and it was selected by fellow Slow Traveler and Blogger, Sheri, As the Seasons Change. Thank you Sheri for selecting this week's ingredient.
I decided to go with a recipe that I found on the Internet called Perfect Entertaining. The recipe is for "Mushroom Stuffed with Pecans and Cream". I followed the recipe changing it only to reduce the portions. I really like pecans and mushrooms so this was a really great appetizer recipe for me to try.
Ingredients:
30 medium mushrooms (I reduced the portion)
1 cup finely chopped pecans
1/4 cup chopped fresh parsley
1/4 cup unsalted butter (I really reduced this portion)
2 cloves garlic, finely chopped (since I love garlic, I used this amount)
1/2 teaspoon salt
1/2 teaspoon dried thyme
1/2 teaspoon white pepper
1/4 cup heavy cream (I drizzled small drops onto each mushroom)
Instructions:
Remove the stems from the mushrooms and finely chop. Place the mushroom caps in a baking dish, hollow side up.
Measure 1 cup of the mushroom stems and use the rest in another dish. Place the 1 cup of stems, pecans, and parsley in a bowl. Stir in the butter, garlic, salt, thyme, and pepper.
Place the mixture into the mushroom caps. Drizzle cream over each mushroom cap. Bake at 350 degrees for 20 minutes, or until brown. Serve hot. Makes 8 servings.

ReplyDeleteKathy, these mushrooms look delicious! I love stuffed mushrooms but have never had any with nuts in them and I bet they taste great. Good idea to drizzle a few drops of cream on top (a little cream goes a long way).

Hi Maria, thanks so much for your comments. What a coincidence that you did stuffed mushrooms too. I'll have to check out your blog after I comment here. The cream was very nice to keep it moist. I just used a couple of drops so it wouldn't get too moist.

But instead of resting, I had the brilliant (not so) idea of making the next three SSB recipes since I might be too busy to cook my dishes before I leave. Well, I'm so exhausted, but the good news is I think all my dishes came out pretty good. I put them on scheduled post and now I'm all set! :)
I'm just so bummed that I'm going to miss your potato week when I'm in Scotland. But when I return I will definitely catch up and make my dish. I even know what I'm going to be making too! :)

Kathy, they sound yummy. I may have to substitute another nut since I don't think they are grown in Australia and I try not to buy imported food (it doesn't seem natural for it to have to cross that big ocean.) That being said, my Husband does love his Pecan Pie at Thanksgiving, so maybe I'll make an exception and keep a few to try your recipe.
