Slow Travel Sunday Slow Bites: SSB #15 - Artichokes

This week's ingredient is Artichoke and it was selected by fellow Slow Traveler, SharonL. Thank you so much Sharon for selecting this week's delicious ingredient.

I decided to go with a recipe that I found on the Internet called Artichoke Salsa from All I followed this quick and simple recipe and totally loved it. I liked it so much I plan on making it again for an upcoming potluck.

1 (6.5 ounce) jar marinated artichoke hearts, drained and chopped
3 Roma (plum) tomatoes, chopped
2 tablespoons chopped red onion
1/4 cup chopped black olives
1 tablespoon chopped garlic
2 tablespoons chopped fresh basil
salt and pepper to taste

In a medium bowl, mix together the artichoke hearts, tomatoes, onion, olives, garlic, salt, and pepper. Serve chilled, or at room temperature, with tortilla chips.

  1. Kathy,
This sounds really simple and delicious!

  2. Sounds like an unusual salsa - and I love unusual things!

  3. Looks like a must try. Thank you for sharing the recipe.

  4. Hi Kathy, this looks delicious! I want to make this one soon. I have been so busy and have missed the past couple of Small Bites. I hope to have time to catch up later this month.

So was Susan Boyle getting lots of publicity when you were in Scotland? I'd forgotten that she lives in Scotland until I saw a special about her on TV last night. Said that her first audition took place in Glasgow. I'm so happy that her album is such a success!

    Happy Monday!

  5. Hi Everyone, thanks so much for your comments...

Candi, this dish was so simple once I got all the ingredients. Great for a quick snack treat if you need something fast. And it was tasty too.

Nancy, I have never had salsa with artichoke before and I was surprised that I really liked it. I think you might like it as well.

Eden, I think you will like this salsa. Very easy and flavorful.

Annie, I think you would really like this salsa a lot. Very easy and lots of flavor. The holidays are such a busy time so I know what you mean. I think everyone are on catch including me...I think later in the month after the holidays will be a lot slower...I look forward to seeing your dishes then.

I went on i-tunes the other day and because I pre-ordered her CD it automatically downloaded. I haven't listened to all of her songs yet but from the ones I listened to it is a definite winner! She sounds great and she looks great on her CD cover. I am so happy for her. A definite feel good success story for the ages!

I watched very little TV while there. The only time I actually watched the news was during breakfast in my Glasgow hotel because they had a big flatscreen TV in there and had the news on, but I didn't notice any coverage of her. All the news were more political stuff.

I did think of her though because while there I noticed different accents from different people I came in contact with. There were some who had similar accents to Susan and I wondered in my head if it is because they came from the same place. I would like to have seen that special of her. I am really happy for her too and can't wait to see CD# 2...

Thank you everyone for your comments. I hope you have a great day today.

  6. I think this looks great! Love artichoke anything and never have had it in Salsa. Definitely going to give it a try.

  7. Hi Anne & Barb, thanks so much for your comments...

I thought this was a pretty easy and yet tasty salsa and I am also going to use it to a holiday pot luck this coming weekend. I hope you girls like it. :)

    Have a great week too!

  8. psst...I happened to notice that your blog roll still shows my Campo Manin entry, but I've posted 2 entries since then. I checked the ST blog forum and there was a discussion about google reader not being updated for ST blogs. So guessing your reader is not being updated either. Apparently a glitch on the ST side, girasoli said other blogs were being updated in her google reader. Weird.

  9. Hi Anne, thanks so much for the tip. I thought it was strange that some of the blogs were showing the same posts. I started to re-save blogs again on my blog roll, thinking that maybe there was a glitch somewhere.

I will manually check my favorite bloggers until they fix the glitch on ST....I definitely don't want to miss out on any new posts.

Thanks so much for the tip! Hope you're having a good holidays so far...

  10. First I thought maybe just my own blog wasn't sending an updated feed out, but then I noticed a couple others with outdated entries listed, so figured something larger was going on. Technology is great, except when there are glitches!

Enjoy your day! We are just about to dig into our office potluck lunch, which is good because I am super hungry and the smell of all the food is driving me mad! :)

  11. Hi Anne, yes I agree with you. Technology is great, except when there are glitches...hope it gets resolved soon for you all.

Have fun at your potluck! It's only 9 in the morning and I'm already hungry too, just thinking about the treats you might be having. :)

    Have a great party!

  12. Hi Kathy, this looks very yummy and it will be perfect for the hot summer days that have arrived here in Australia.
This morning I realized that ST bloggers sites weren't being updated on my blog roll. Thanks to Anne for bringing it up. At least I know I am not the only one it is happening to.

  13. Hi Maya, thanks so much for your comments. I think you would really like this salsa. It's great served cold with the tortilla chips.

And yes, I am so thankful to Anne for the tip. I'm now trying to catch up with everyone since I probably missed some really cool posts because of lack of updates to my blog roll.

Thanks again for your comments and have a great day!

  14. Hi, as you can see this is my first post here.
I will be glad to get any help at the beginning.
Thanks and good luck everyone! ;)
