This week's ingredient is Artichoke and it was selected by fellow Slow Traveler, SharonL. Thank you so much Sharon for selecting this week's delicious ingredient.
I decided to go with a recipe that I found on the Internet called Artichoke Salsa from All Recipes.com. I followed this quick and simple recipe and totally loved it. I liked it so much I plan on making it again for an upcoming potluck.
Ingredients
1 (6.5 ounce) jar marinated artichoke hearts, drained and chopped
3 Roma (plum) tomatoes, chopped
2 tablespoons chopped red onion
1/4 cup chopped black olives
1 tablespoon chopped garlic
2 tablespoons chopped fresh basil
salt and pepper to taste
Directions
In a medium bowl, mix together the artichoke hearts, tomatoes, onion, olives, garlic, salt, and pepper. Serve chilled, or at room temperature, with tortilla chips.

ReplyDeleteSo was Susan Boyle getting lots of publicity when you were in Scotland? I'd forgotten that she lives in Scotland until I saw a special about her on TV last night. Said that her first audition took place in Glasgow. I'm so happy that her album is such a success!

Annie, I think you would really like this salsa a lot. Very easy and lots of flavor. The holidays are such a busy time so I know what you mean. I went on i-tunes the other day and because I pre-ordered her CD it automatically downloaded. I haven't listened to all of her songs yet but from the ones I listened to it is a definite winner! She sounds great and she looks great on her CD cover. I am so happy for her. A definite feel good success story for the ages!
I watched very little TV while there. The only time I actually watched the news was during breakfast in my Glasgow hotel because they had a big flatscreen TV in there and had the news on, but I didn't notice any coverage of her. All the news were more political stuff.
I did think of her though because while there I noticed different accents from different people I came in contact with. There were some who had similar accents to Susan and I wondered in my head if it is because they came from the same place. I would like to have seen that special of her. I am really happy for her too and can't wait to see CD# 2...

psst...I happened to notice that your blog roll still shows my Campo Manin entry, but I've posted 2 entries since then. I checked the ST blog forum and there was a discussion about google reader not being updated for ST blogs. So guessing your reader is not being updated either. Apparently a glitch on the ST side, girasoli said other blogs were being updated in her google reader. Weird.
