Slow Travel Sunday Small Bites: SSB Week # 6 - Smoked Salmon

This week's ingredient is Smoked Salmon and it was selected by fellow Slow Traveler and Blogger, MarciaB, Happy Trails For Us: My Reluctant Blog. Thank you Marcia for selecting this week's ingredient.

I decided to go with a recipe that I found on the Internet called Group Recipes. The recipe is for "Smoked Salmon on Red Potatoes". I followed the recipe exactly (except for reducing the portions). There was no photo on the website, so I hope this is how it is supposed to look like. I've had smoked salmon before and really enjoy it and it was pretty tasty with this recipe!

1 1/2 cups sour cream
3/4 cup fresh dill, minced
1/4 cup Dijon mustard
1/4 cup brown sugar
2 1/2 pounds baby red potatoes, cleaned, unpeeled, and sliced into 1/2 inch rounds
5 tbs olive oil
2 tbs finely grated lemon zest Salt and freshly ground pepper
1 pound smoked salmon, thinly sliced, cut into 1-inch squares

- Preheat oven to 400 . In a small bowl, stir together the sour cream, minced dill, mustard, brown sugar until blended.

- In a large bowl combine the potato, olive oil and lemon zest.

- Season generously with salt and pepper.

- With your hands , turn the potatoes to coat evenly. Then spread the potatoes in a single layer on large cookie sheets.

- Bake them, turning once, until golden on both sides, and tender when pierced with a fork. The potatoes can be prepared up to 6 hours in advance and stored at room temperature until ready to serve. Reheat them in the oven at 375 , until warm.

- Place a spoonful of the dill sauce on each hot potato slice.

- Top each with a square of the salmon and garnish with dill sprig. Makes 40 pieces.

  1. Kathy,

Your recipe sounds and looks great. I think smoked salmon and dill go together greatly.

  2. Hi Kathy, this looks so delicious! What a great idea, to use a potato round instead of a cracker or bread. I bet it tastes great. Good find for this recipe!

    Happy Sunday!

  3. Hi Kathy, your salmon appetizer looks delicious and such pretty presentation (love the plate!). I love sour cream and dill with smoked (or fresh) salmon. I'll be making this recipe for sure!

I also chose a recipe using potatoes but haven't made it yet. Will be making it this evening with my daughter's assistance.

    Happy Sunday! :)

  4. Sounds yummy! I'm sure the lemon zest really added that extra touch.

  5. Hi everyone, thanks so much for your comments...

Candi, I thought the salmon and dill went really well together. First time making something with Smoked Salmon. It was pretty easy.

Annie, I thought the potato was a cool idea too. The dish was very tasty to me and I actually loved the potatoes so much I made more and used them in another dish....Glad you liked the recipe. Hope you had a great weekend!

Maria, thanks for liking my plate. I got it at Ross along with a couple more for this cooking group since I didn't have any appetizer dishes. They had a nice selection. That's so cool that you selected a recipe with potatoes too. I'm looking forward to seeing what you and your daughter cooked. I really enjoyed the combination of all the ingredients in this recipe, especially the potatoes. Hope you had a great weekend too!

Cindy, yes I thought the lemon zest added a little something to the potatoes which I liked so much I made it for another dish I was preparing...

Thanks again everyone! This was a really great ingredient! Hope you have a great weekend.

  6. Kathy, I am smiling at your reply because not only are you making flower garnishes, you are buying new dishes too! We might have to start calling you Martha Stewart Jr., ha ha. I am just teasing - I think it's great! And now I want to stop by Ross on the way home and see if I can find a plate that pretty.

OT but I read that Adam's album will be released on Nov. 24. I am so psyched to hear it and very curious to see what direction he goes in. He could do so many different types of music, it will be sooo interesting to see what he does on Album #1!

Hope you are enjoying your long weekend!

  7. Hi Annie, :) that's funny! I also found a really nice white dish at the 98cents store of all places! I'll feature it in next week's recipe. :)

I also can't wait to hear Adam's much anticipated first album too. I'm definitely buying it for sure. I'm not sure if you have seen the trailor. If not here it is:

It's called Time for Miracles and it is for an upcoming movie soundtrack called 2012! It sounds pretty cool! I think his first album will be a big seller and I hope that he surprises us with all kinds of sounds like he did on idol! I have a feeling that his album and CDs will most likely out sell all the other past Idol winners. It's all very exciting and I can't wait too.

I'm so glad I still have today off to catch up and I'm hoping to do my recipe for next week today to.

Hope you had a great weekend! I really like your salmon dish and I want to try and make it. My favorite meal of the day is breakfast and I think your salmon dish would be so great to have one morning. Have a great day today!

  8. Kathy, I drooled over this recipe. Like the others, I love the idea of the potato for a base. Very cool.

  9. Hi Deborah, thanks so much for your comments. I thought the smoked salmon and all the ingredients went really well together. Hopefully, you will like it too.

    Have a great day today!
