Slow Travel: Salad Samplers # 6 (5/31) Fajita Salad w/Creamy Cilantro-Lime Sauce

Sparked by encouragements from AnnieNC from Slow Travel, I decided to make this week's Slow Travel Sunday Salad Samplers salad. It was selected by Kim, What I Really Think.

Thanks Annie for the little nudge and thanks to Kim for a very delicious and nutritious salad.



Fajita Salad with Creamy Cilantro-Lime Sauce
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 pound skinned, boned chicken breast, cut into thin strips
Cooking spray
6 cups shredded romaine lettuce
1 1/3 cups thinly sliced green bell pepper rings
1 cup sliced red onion, separated into rings
1/2 cup (2 ounces) shredded reduced-fat Monterey Jack cheese
2 tablespoons sliced ripe olives
1 (15-ounce) can pinto beans, rinsed and drained
1 medium tomato, cut into 8 wedges
Creamy Cilantro-Lime Sauce

Combine first 6 ingredients in a medium bowl. Add chicken; toss to coat. Place a large nonstick skillet coated with cooking spray over medium heat until hot. Add chicken mixture; sauté 8 minutes or until chicken is done. Set aside.

Divide lettuce and next 6 ingredients (lettuce through tomato) among 4 bowls; top with chicken mixture. Serve with Creamy Cilantro-Lime Sauce.

Yield: 4 servings (serving size: 1 serving salad, 3 ounces chicken, and 1/3 cup sauce)

Creamy Cilantro-Lime Sauce
1/2 cup fat-free sour cream
1/2 cup light mayonnaise
1/3 cup skim milk
3 tablespoons lime juice
2 tablespoons chopped fresh cilantro
1 tablespoon balsamic vinegar
2 large garlic cloves, minced

Combine all ingredients, and stir well with a whisk. Cover sauce, and chill.

Yield: 1 1/3 cups (serving size: 1/3 cup)

    This one was good - I enjoyed it and had some leftovers to take to work for lunch too.

    And I have to tell you that I've already made next week's salad (Deborah's Wild Rice and Corn Salad) and it's awesome and even easier to make than this one. If you get inspired!

    Wow, you've already made next week's salad! Excellent. I will check out Deborah's salad too. I love putting corn in my salads. I just might get inspired again.

    I haven't posted it on Slow Talk because I'm not in the group. But maybe I might post it so I can also say how really delicious I thought the salad was.

    You know, it didn't take that long to make it. First, I put on some Cool One Music and then went at it and before I knew it, voila I was done.

  4. Hi Girasoli, thanks for your comments. I'm not very good at cooking but sometimes I like to dabble. Kim's recipe choice sounded really good so when Annie mentioned it, I thought this salad would be pretty good to try. I also did a salmon dish from the Slow Talk forum a few months ago too which turned out pretty good. I tend to go for simple and easy to make recipes to ensure my success! :)

    I’m impressed that Annie already made the next salad. I’m going shopping today for the ingredients and plan on making it on Wednesday.

    Hi Maria, thanks for your comments. I totally agree, Kim's salad was pretty fun and easy to make! And since I think it went pretty well, I think I will try Deborah’s wild rice and corn salad too. That sounds very delicious. I will have to copy her ingredients and go shopping too. :)

  9. Yay Kathy, glad you're going for the Wild Rice salad too! Here's a head's up...

    I'd never cooked wild rice before, and the box said to cook it for an hour or maybe less (it said to check to see how soft it is). Well, I checked mine after 40 minutes and it was "al dente"...soft enough but still had some bite to it, so I took it off. Ended up being perfect for a salad (cause I don't think the salad would have been as good if the rice had been too mushy).

    It's a really good salad!

  10. Hi Annie, yes I enjoyed it so much this past Sunday, that I want to try Deborah's choice this week too! Thanks for the tip on the wild rice. I have not made wild rice before and I'm thankful for the heads up on the cooking. I have a tendency to over cook things so I'm glad you told me about the rice. I probably would've let it cook longer making the rice mushy.

    Making my Sunday salad provided three meals for me during this week which is great. I had it for lunch and two dinners. Nice not to have to cook when coming home from a long day at work and have this great salad to eat.

    Thanks so much for the little nudge Annie! Can't wait to try it again this week. It's interesting how everyone changes the recipe a little making it even more delicious.

  11. The Airfare Rhumba! That is so great! I'll have to remember that term. That price doesn't look too bad - not much more than I paid to go to Venice last year from the East Coast.

    And it's funny about the sheep...I remember one time a friend went to Scotland and sent me a postcard with a pic of a sheep on it (and it WAS an unusually beautiful little sheep). I'm going to see if I still have that postcard when I get home!

  12. Hi Annie, glad you liked my Airfare Search nickname! :) I think the price is pretty reasonable too. I'm going to wait a bit more because the gas prices are through the roof right now and I'm hoping the prices will drop later in the summer. I'm going to gamble a little in my rumba dance! :)

    That is cool that your friend sent you a postcard with a sheep on it from Scotland. It would be cool to see it too if you can find it! I read this person's blog from the Slow Talk forums and there were these incredible looking sheep with long hair and horns in some of her photos. Very cool! Doesn't even look like a sheep at all. So now that I have that in my head I want to see the highlands so I can see them. It's the same feeling I got when I saw the yellow tiled dome of the Cathedral in Cadiz. Some things just sort of need to be seen up close and personal! LOL! I can't wait!

    I've had a good but very busy week so I am so ready for the weekend! Hope you've had a good week! One more day before the weekend. Whoo Hoo! Have a great Friday Annie!

  13. I just watched French Kiss iwth Meg Ryan - haven't seen it in years, it was really lovely. ANd so is th esoundtrack I am listening to now, as I left the DVD running after it finished.

    We just had some fireworks courtesy of Alessandro down in the driveway. It's the Queen's birthday long weekend here. Two of the three cats sat in the window with me to watch. :)

  14. Hi Leslie, wow I haven't watched that movie in years too! Now I'll have to watch it again. It has played on my cable every now and then so maybe I'll record it next time. And I'll have to listen to the sound track again too.

    The fireworks sounds very cool! I'm surprised your cats weren't afraid of the noise but maybe they had fun watching Alessandro and also because you were there watching too.

  15. I found the post card! Good thing I'm such a pack rat about some things like cards and photos. It's a baby sheep with long hair...just beautiful! The card is from the Isle of Skye, I think. I'll scan it in and post it for you. Might be early next week before I have time (my nephews are coming for a two-night sleepover weekend!).

    That's so great that you found that postcard. I look forward to seeing it next week or whenever you get a chance. I have to do some research to find out what kind of sheep these are and also exactly where in Scotland I can find them. I think this person with the blog and photos that I mentioned went to the island of Skye too. Maybe that's where I'll find them. And so now I want to visit there but it seems far from Edinburgh. I'll have to check it out more.

    The photos there remind me so much of the beautiful scenes in the movie you recommended, Local Hero! How fun would that be to visit a place like that.
