Slow Travel Sunday Small Bites: Week # 3 - Sun Dried Tomato

This week's ingredient is Sun Dried Tomato and it was selected by Slow Talk Moderator and fellow Slow Traveler, Amy, Destination Anywhere. Thank you Amy for selecting a great ingredient.

I decided to go with a recipe for Sun-Dried Tomato Frittata. A Frittata is a thick, Italian style omelet. I remember having my first Frittata in Rome back in 2005 and loved it. I once again found the recipe in one of the three cook books I bought for this cooking group. The book is called "500 Appetizers" by Susannah Blake.

I thought this was an easy recipe and it was really good too. Maybe even as good as the one I had in Rome! Almost . . . . :)

Here is my Frittata in whole...



You can then cut the Frittata into wedges and serve them as a wonderful snack.


Ingredients:

2 tbsp. olive oil
1 Spanish onion, thinly sliced
Salt
1 tsp. fresh thyme leaves
6 sun-dried tomatoes in oil, drained and sliced
1/3 cup freshly grated Parmesan cheese
6 eggs, beaten
Ground black pepper

Instructions:

- Heat the oil in a large frying pan. Then add the onion, sprinkle a little salt and the thyme, and fry gently for about 15 minutes. Stir in the tomatoes and season to taste.

- Stir the Parmesan into the eggs and season with black pepper. Pour the egg mixture over the onions and cook gently for 5 to 10 minutes, until the frittata is firm but still moist on top. Lift the edges of the frittata occasionally to allow uncooked egg to run underneath.

- Preheat the broiler. Brown the top of the frittata under the broiler for 3 to 5 minutes. Serve hot, warm or at room temperature, cut into wedges.

  4. Hi Maria, thanks for liking my Frittata. It did bring back great memories of Rome for me. Hard to believe it was that long ago. Thanks also for liking my little flower. It almost looks like a plumeria. I wanted to dress up the plate even though the plate is already decorated so I went on line to see what was easy for me to do. This was the easiest thing I could find. Thanks so much for your comments.

    Hi Annie, thanks for liking my frittata. It's a pretty good book. It doesn't have exactly 500 recipes. But it has about 5 variations for several of it's recipes. Like for this one you can spice it up by adding chili's. Pretty cool. Thanks for liking my little red flower.     I told Maria it reminds me of a pretty Plumeria flower. Thanks again to both you and Maria for noticing my cute flower and liking my Frittata.

    As a side note, I spoke to a couple of my co-workers who occassionally watch AI, but when they heard that Ellen was going to be a judge they are going to start watching it regularly and she spoke to her friends and they all say the same thing because they are fans of Ellen. So it looks like the addition of Ellen will bring some additional viewers to AI. Kind of interesting!

  7. Kathy, it's a beautiful little flower. A year ago, did you ever think you'd be making flowers from food for garnishes?!? I love it!

    That is very interesting about Ellen. I hadn't thought about her bringing new viewers to AI but it makes sense now that I think about it. I'm really looking forward to seeing what this new judge team is like. I bet she and Simon might end up being a great pair!

  8. Hi Annie, LOL! You are soooo right. I would never have imagined that I would be making salads, finding recipes for ingredients (some of which I have never cooked with before) and learning how to make a flower garnish! :) Life certainly has a way of evolving doesn't it. I love it!

    I can't wait to make something for your avocado ingredient next week. I totally love anything with Avocado in it and I am looking forward to the weekend to make my dish.

    Ellen was saying that if she thought that Simon was being too mean that she would say so. I think it will be a very entertaining pairing and I can't wait for the season to start. She will be a great addition, but i also hope they find some very good contestants like they did in Season 8. I'm really looking forward to it!
